Healthier Peanut Butter Cookies
Prep: 20 minutes                         Cook: 10 minutes

Ingredients

1 c.

whole wheat pastry flour

1/2 tsp.

baking soda

1/2 tsp.

baking powder

1/2 c.

Smart Balance (at room temperature)

1/2 c.

Splenda

1/2 c.

brown sugar

1 tsp.

Vanilla extract

2

 egg whites

1/2 c.

natural peanut butter

  1. Preheat oven to 350 degrees.
  2. Cream together Smart Balance and peanut butter.
  3. Add, Splenda and brown sugar
  4. Stir in egg whites, vanilla, baking powder, baking soda and flour in a large mixing blow until creamy.
  5. Place dough on cookie sheet by rounded teaspoon, pressing each with a floured fork to flatten slightly.
  6. Bake 10 minutes until golden brown. Cool for 2 minutes before removing from baking sheet.
